According to YouTuber Davy Jones, a content creator invited to preview GTA 6 at Rockstar North, GTA 6 will not feature any first-person mechanics.

He claimed that he asked Rockstar whether there will be a first-person mode, and co-head Rob Nelson informed him that GTA 6 is primarily built around a third-person camera perspective.

This does appear true. In the recently released GTA 6 Extended Look, there wasn't a single first-person camera view. While previous trailers featured clips of Jason driving in first-person view, those probably weren't gameplay footage.
