How To Get Soot The Cat
Soot is likely to be the first pet you'll unlock, although you won't be able to obtain it immediately after starting the game.

First, continue progressing through the main story until Great Inagua becomes Edward's permanent hideout after Sequence 04: This Old Cove.
Once the hideout has been unlocked, a Local Event called Cat Distribution System will become available in the area.
Travel to Great Inagua (819, 441) and climb onto the nearby rooftops.
Unlike the other pets, getting Soot doesn't involve fighting enemies or completing a lengthy objective.
Interact with the cat to permanently add it to your collection, after which it becomes available from the Inventory menu.
How To Get Albert The Monkey
Albert is obtained through another Local Event, this time in Havana.

Head to the Monkey Business event located at approximately 225, 568 near the southeastern docks.
When you arrive, you'll discover a group of Spanish sailors aboard a ship mistreating the monkey.
Board the vessel, eliminate the enemies, and rescue Albert by interacting with him once the area is safe.
Once you complete the event, Albert becomes a permanent companion that you can equip aboard the Jackdaw whenever you like.
How To Get The Dark Animus Familiar
Unlike the previous two pets, the Dark Animus Familiar isn't found through exploration or Local Events.

Instead, open the Animus Projects menu and select the Eye in the Dark reward track.
The Dark Animus Familiar is the first reward available on this progression path and costs 600 Data Fragments to unlock.
Data Fragments are primarily earned by completing Anomaly side missions that appear throughout the Caribbean.
Continue clearing these optional activities until you've accumulated enough fragments, then redeem the reward to permanently unlock the companion.
How To Get Gold Tom
Gold Tom is the only pet that can't be earned through gameplay.

Instead, it's included as part of the Deluxe Edition through the Master Assassin Naval Pack, which also contains several exclusive cosmetics and customization items for the Jackdaw.
If you're playing the Standard Edition, there's currently no in-game method of unlocking Gold Tom separately.
After unlocking any companion, open the Inventory menu and navigate to the final equipment slot, which is reserved exclusively for pets.
Select the companion you'd like to use, and it will immediately become your active ship pet.
You can freely switch between any pets you've collected at any point during your playthrough without any restrictions.
